PAN FRIED FISH
WITH SPICY CORIANDER SAUCE
4 medium white fish fillets
plain flour
45g butter
60g butter extra
1/4 tsp ground coriander
1/4 tsp cummin seeds
1/3 cup lime juice , or lemon juice
1 tbsp shredded lime rind, or lemon rind
1 tbsp chopped fresh coriander leaves
Dust the fillets lightly with flour, shake away the excess flour. Melt butter in a frypan, add fillets in a single layer and cook over a medium heat for about 3 minutes each side or until tender and golden. Drain on a paper towel and keep warm.
Melt the extra butter in the same pan, add ground coriander and cummin seeds to the pan, stir over medium heat for about 1 minute. Stir in juice, rind and fresh coriander leaves, stir for 2 minutes. Serve sauce with fish fillets.
| CORIANDER GINGER CHICKEN
2 cloves garlic, crushed
1 tsp grated fresh ginger
1/4 cup chopped fresh coriander leaves
1/4 cup chopped fresh mint
2 spring onions finely chopped
1/4 cup soy sauce
1/4 cup oil
2 tsps castor sugar
8 chicken thigh fillets
Combine garlic, ginger, coriander, mint , spring onions, soy sauce, oil and sugar in a large bowl, add chicken and mix well. Cover and leave in the refrigerator overnight.
Add chicken in a single layer to the a heated oiled frying pan, cook over a medium heat for about 5 minutes each side until tender and golden brown. Brush with remaining marinade during cooking.
| THAI SOUP WITH MEATBALLS
2 litre water
2 Tablespoons Tom Yam Paste
1 teaspoon Sambal Oelek
1 teaspoon crushed garlic
1 teaspoon chopped ginger
1 or more (according to taste) fresh red chiles - chopped
Generous quantity green coriander - chopped
Juice and zest of 1 lime (more according to taste) and/or chopped lemongrass
2 Tablespoons thai fish sauce (or to taste)
Rice noodles
Finely shredded veges to taste
Chicken, shrimps or meatballs (if required)
Specialised ingredients from most Asian Food shops
Bring water to boil, add spices and seasoning, add meatballs or meat if using. If using meat simmer to cook - frozen meatballs need about 1/2 an hour.
Add noodles and veges and simmer until cooked. MEATBALLS FOR SOUP
Minced pork or chicken
Cornflour to bind
Garlic - chopped or minced
Ginger - chopped or minced
Chilli - chopped
Coriander - chopped
Onion - finely chopped
Mix together and roll intol balls the size of a walnut. Dip your hand into water when rolling. These are good frozen, and best at least partly frozen.
